McIlhenny Company is a family-owned US producer of TABASCO brand pepper sauce, based on Avery Island, Louisiana. Edmund McIlhenny started the business in 1868, and the McIlhenny family still owns it. Besides the original red sauce it makes habanero, jalapeño, chipotle and other pepper sauces, plus branded foods such as mayonnaise and Bloody Mary mix. The sauce is sold in more than 195 countries and territories, with packaging in 36 languages and dialects.
